What Ghee Is

Ghee is clarified butter — dairy fat from which the milk solids and water have been removed through slow heating. The result is a stable, high-fat cooking medium with a high smoke point and a long shelf life without refrigeration.

The quality and character of ghee is determined by two variables: the milk source and the clarification process. These two variables are what Zàgro documents, and what most ghee supply chains do not.

The Bilona Method

The Bilona process is the traditional Indian method of producing ghee from whole milk. It follows a specific sequence:

  1. Whole milk is gently heated and cooled to set temperature
  2. Culture is added and milk is set into curd overnight
  3. Curd is hand-churned — bilona — to separate butter from buttermilk
  4. Butter is slowly clarified over controlled heat until all moisture evaporates and milk solids separate

The industrial alternative skips steps 1 through 3 entirely. Cream is separated mechanically from the milk, then clarified directly. This is faster and produces higher volume from the same milk input. It is not the Bilona method.

The distinction matters to buyers who specify process on their product label.

Why Source Matters

The milk source is the most important variable in Bilona ghee quality and the least commonly documented. Most Indian ghee — including many products labelled "Bilona" — is produced from pooled milk sourced from multiple undocumented farms.

Single-farm sourcing means the milk comes from animals on one identified farm. The breed, the feed, the daily yield, and the processing date are all knowable and documentable. This is what Zàgro requires before any batch is released.

Zàgro Natural sources A2 Bilona ghee from a single named farm in Sangli, Maharashtra, from a single indigenous Khillar cow. Daily yield averages 350–400ml. Total annual production is limited to approximately 5–7 kilograms. The process follows the traditional Bilona sequence — no cream-separation shortcut. Every batch is verified by the founder before release.
